My kids do this cool thing….

when we buy a snack at Costco. They eat all of that snack from Costco. They loved that snack from Costco. So naturally, when I’m at Costco again, I buy that snack at Costco. Then the kids decide (without filling me in) that they hate that snack from Costco.
Now we have exactly 40 of the snack that they will not eat. All the while, they are complaining that we have no food.
Teenagers are the best. Really, I love them, but the amount of snacks we have in the house while they tell me they’re hungry and there is nothing to eat, drives me mad. Anyway, I found a stash of chocolate chunk croissants that the kids used to love, just hanging out in a basket, rotting away and I had an idea.
French Toast Casserole anyone?!

French Toast Casserole
Servings 12
Ingredients
- 1 loaf Bread: french bread, sourdough, croissants, brioche
- 2 c milk
- 6 eggs
- 1 T vanilla
- 1 tbsp cinnamon
- 1/2 tsp salt
Mix-ins (1 Cup)
- strawberries
- blueberries
- pecans
- chocolate chips
Toppings
- powdered sugar
- whipped cream
- syrup
Instructions
- Preheat the oven to 375 degrees.
- Grease a 13 x 9 baking dish and set aside.
- Cut up your choice of bread into bite-size pieces and place them in the greased baking pan.
- If you are adding mix-ins, you can sprinkle them on top of the bread pieces.
- Add the milk, eggs, vanilla, a dash of salt and cinnamon to taste. Whisk together.
- Pour the liquid over the bread pieces in the pan.
- Top the pan with a piece of foil to prevent over-browning.
- Put the pan in the oven and bake for 45 minutes.
- Remove foil from the pan and bake for 10-15 more minutes.
- Remove from the oven an allow the casserole to rest for 5 minutes before serving with toppings.
