Grilled Pizzas
I love to have a plan. I also love how having a plan makes my life easier. It is one less thing that I have to plan or decide in the moment. Just like Taco Tuesday (I also love alliteration), the Berges Family participates in Pizza Fridays. Do I particularly love pizza? No. But I love having a plan more than I don’t love pizza. I am a practicing Lazy Genius, and deciding once is my jam.
While I don’t love to get pizza from the big chain pizza places, I do love pizza that’s made at home. I typically use The Pioneer Women’s Pizza Crust recipe, then tweak the toppings to include things my family loves. But when Costco has pita bread on sale, I stock up for these grilled pizzas. You should do the same, especially when it’s too hot for the oven!





Grilled Pizzas
Ingredients
- 6 Pita Bread
Meats
- chicken
- bacon
- pepperoni
- Italian sausage
Sauces
- pizza sauce
- pesto
- BBQ sauce
- buffalo sauce
Toppings
- Mozzarella Cheese
- Veggies: onions, peppers, tomatoes, jalapenos, our favorite is green chilies
Instructions
- Gather all ingredients.
- Heat the grill to high heat.
- Place a pita onto a sheet of aluminum foil, slightly larger than the bread.
- Spoon your choice of sauce onto a pita bread.
- Top with your choice of toppings. Some ideas: BBQ Chicken, Pesto Chicken, Meat Lovers, Supreme, whatever makes your heart (and your belly) happy.
- Bring your pizzas out to the grill and place them on the grill. I was able to place two on the grill and two on the top rack.
- After three minutes, rotate the pizzas and cook for 2 more minutes.
- Remove from the grill and allow to cool before using a pizza slicer to cut four slices.
