Heat a frying pan or panini press to medium-high heat.
Heat the bacon on the pan or press, we like our bacon, extra crispy, almost burnt.
Place the sourdough slices in pairs, face up.
Spread guacamole on one slice and chipotle sauce on the other.
Stack sliced turkey on one of the slices (I like 3 slices per sandwich).
Top with a slice of pepperjack cheese.
Break two slices of bacon and line them up on top of the pepperjack.
Place the remaining slice of bread on top.
Cook for 8-10 minutes in a panini press, or 6-8 minutes per side on frying pan.
