Instructions
Preheat the oven to 350 degrees.
Prepare a 10"x 15" jelly roll pan by lining it with parchment paper.
In a large bowl, mix the oats, nuts and brown sugar. Stir to combine.
In a 3 qt. sauce pan, add the coconut oil, honey and cocoa powder.
Stir with a rubber scraper to mix it as it warms. Do not let it boil.
When the wet mixture is well-combined, pour it into the large bowl over the dry ingredients.
Use the rubber scraper to mix the ingredients together, making sure to scrape the bottom and coat all of the oats and nut.
Place in the heated oven for 30 minutes. When the 30 minutes is up, leave it in the oven to cool, for 2 hours, or overnight.
Notes
Some of my preferred nuts for granola include walnuts, pecans and almonds in homemade granola.
