Chocolate Walnut Granola

Ingredients

  • 6 cups rolled oats
  • 2 cups preferred nuts
  • 1/2 cup brown sugar
  • 1 cup coconut oil
  • 1 cup honey
  • 1 cup unsweetened cocoa powder
  • 1 cup mini chocolate chips

Instructions

  • Preheat the oven to 350 degrees.
  • Prepare a 10"x 15" jelly roll pan by lining it with parchment paper.
  • In a large bowl, mix the oats, nuts and brown sugar. Stir to combine.
  • In a 3 qt. sauce pan, add the coconut oil, honey and cocoa powder.
  • Stir with a rubber scraper to mix it as it warms. Do not let it boil.
  • When the wet mixture is well-combined, pour it into the large bowl over the dry ingredients.
  • Use the rubber scraper to mix the ingredients together, making sure to scrape the bottom and coat all of the oats and nut.
  • Place in the heated oven for 30 minutes. When the 30 minutes is up, leave it in the oven to cool, for 2 hours, or overnight.

Notes

Some of my preferred nuts for granola include walnuts, pecans and almonds in homemade granola.
